PREPARATION: "school of cuisine"

rinse the spelt, drain and boil in salted water

slice the scallion finely and fry slightly in olive oil in a great pan

coat with flour the breast and add to the scallion, brown on both sides
drain the spelt and fry slightly
with the vegetables sliced to very small cubes and the beans
when the breasts are well browned sprinkle with red wine and let it evaporate over high heat
take the breasts
cut to slices 1/4 in thick. Put with the spelt onto the dish
