   PREPARATION: 

prepare a basis of a mayonnaise, without lemon juice.

Add concentrated tomatoes pulp  and stir well
Add vinegar and sugar, if necessary a little olive oil, and mix
stir and add a little  Cognac : attention to not dilute too the sauce. Blend and if necessary, add a little oil.
put in refrigerator some minutes before serving
