ITALIAN FISH Mussels or molluscs:characteritics and italian names In this section we present the molluscs and mussels, more commonly used in the Italian cooking. As always giving priority to those used in our Italian recipes. We have the oysters used as italian starter, the very common striped venus clams used with many spaghetti sauces, blue mussels, razor shells very common made baked au gratin. Each name of mussels is linked with description and cooking recipes with pictures. The names vary, in Italy and abroad, as are linked with the folk tradition.
