 Notes to recipe: Umbrichelli all'amatriciana recipe has an interesting history: it is a traditional  recipe of Orvieto, combining the Umbrian origins  (the Umbrichelli) with a very Roman (or better of Latium) sauce like the Amatriciana . This recipe is made using the Guanciale, made with pork jaws. As it is very difficult to find it you can use also standard bacon.
