Notes: this kind of pasta combines very well with ingredients with a strong flavour. The anchovies are widespread in many recipes of all Italy and also in Apulia are used for a good sauce. It is also available a recipe made with spaghetti, but with a very different taste, due to the thick shape of orecchiette and the different flavour of the fresh semolina flour.
